  • 3 tubes (8 ounces each) refrigerated crescent rolls
  • 4 cups cubed cooked turkey
  • 1-1/2 cups shredded cheddar or Swiss cheese

  • 1/2 cup apple cider or juice
  • 1/2 cup apple jelly

TURKEY:

  • 2 quarts water
  • 1 cup paprika
  • 1 cup chili powder
  • 2 packages (3 ounces each) crab boil in a bag
  • 1/2 cup packed brown sugar
  • 2 medium onions, quartered, divided
  • 2 tablespoons dried rosemary, crushed
  • 2 tablespoons dried thyme
  • 10 garlic cloves, peeled and halved, divided
  • 2 quarts cold water
  • 2 turkey-sized oven roasting bags
  • 1 turkey (10 to 12 pounds)
  • 1/4 cup olive oil

RUB:

  • 3 tablespoons paprika
  • 3 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons ground cumin

Directions

  1. In a stockpot, combine water, paprika, chili powder, crab boil in a bag, brown sugar, half of the onions rosemary, thyme and half of the garlic.
  2. Bring to a boil.
  3. Cook and stir 5 minutes.
  4. Remove from heat.
  5. Add cold water to cool the brine to room temperature.
  6. Place one oven roasting bag inside the other.
  7. Place turkey inside both bags; pour in cooled brine.
  8. Seal bags, pressing out as much air as possible; turn to coat turkey.

  10. Remove turkey from brine, reserving brine in a bag; rinse turkey and pat dry.

  • 3/4 cup sugar
  • 2 medium lemons, quartered

  • 2 cups cold apple juice
  • 2 cups cold orange juice
  • 2 large oven roasting bags

  • 1 tablespoon minced fresh rosemary
